Meet the NEW GENERATION of sauerkraut. It’s naturally fermented, it comes in audacious flavors, and it isn’t just for dogs.

KATHRYN LUKAS FOUNDED Farmhouse Culture, a small organic sauerkraut business, in Santa Cruz, California. Appropriately enough, the city is halfway between two world bastions of fermented cabbage — Munich, Germany, and Seoul, South Korea — both culinary muses for Lukas.

I saw the recipe for the individual jars and am wondering if it is possible to use Mason jars for this recipe? I am excited to try this and I look forward to your quick response.

You can use mason jars. Make sure to burp your jar every day for the first few days to avoid bubble overs. Have fun!

    Hi Kathryn:

I first heard about lacto-fermentation from some friends back in 2004. They recommended “Nourishing Traditions” by Sally Fallon, and I did make a few okay batches of sauerkraut. Not having a lot of time though, I started buying some great off the shelf kraut from Bubbies. But last weekend I found your Ginger Beet Kraut and was really blown away. That was great stuff – thank you for a taste bud blowing experience. I just bought out the rest of the jars, and am also going to try a bottle of Dill Kraut.

Anyway, I noticed Bubbies has been available at the Savemart for about a year now. Is Firehouse planning to get into Savemart or Safeway? It would be nice if I didn’t have to go so far to get a jar.

God Bless you and thanks for such great Kraut.

Hi there and thanks so much for loving our kraut! Hopefully you like our other flavors as much as you liked the Ginger Beet. The Garlic Dill Pickle is a best seller- tastes just like pickles.

We are expanding rapidly throughout the U.S. but will likely not be in Savemart or Safeway right away. Please check back here for availability in stores near you.

      Thanks again and Happy Holidays!

      Kathryn
